A Maytag refrigerator can make loud noises due to several reasons. A problem with the expansion valve can interrupt the refrigerant flow and cause hissing or gurgling sounds. A malfunctioning damper control system can result in clunking or knocking sounds. A defective fresh food evaporator fan motor can cause a squealing or screeching noise.
In general, something in the drip tray is causing the odor, there are invisible particles causing smells on the surfaces of the compartments, trays, racks or walls of your fridge, or something spilled or leaked and the smell is stored in the ice, producing an odor during the defrost cycle.
In general, reset the internal computer on your Maytag fridge by pulling the plug out at the wall outlet, waiting 10 seconds or so, and then plugging it back in. If the fan still won’t run when you hear your fridge humming, ensure cooling mode is set to on.

A Maytag fridge that is producing too much ice, indicates the ice bin is out of position. Or, there is something in the ice bin. If there is no ice production it’s generally an issue with the parts of the fridge that supply the water, or the ice maker is turned off.
